Rice Crispie Treat Sushi

Disclaimer: This recipe is NOT healthy, but it is fun to make :)

A couple of my girlfriends and I have decided to try to have a monthly dinner club.  Our first one was Saturday night with an Asian Bistro theme.  One couple is in charge of the food for the dinner at their house and the other couples split the drinks and dessert.  I chose dessert knowing that I've wanted to make this candy sushi from pinterest for a while!

Ingredients:
  • 4 tbsp. butter
  • 4 cups mini marshmallows
  • 6 cups rice cereal
  • 20 gummy worms
  • 12 green fruit roll ups or fruit by the foot
  • 30 gummy fish
Directions:
  1. Heat the marshmallows and butter together in a large bowl/pan until melted.  Can be heated on the stove top or in the microwave.
  2. Add in the cereal and mix until well coated
  3. Line two jelly roll pans with wax paper and spray them with non-stick cooking spray.
  4. Place half of the mixture on each pan making one thicker (for the sashimi) and one as thin as you can get it without falling apart (for the sushi roll)
  5. Start with the sushi thin rice crispies and place 2 gummy worms next to each other to create the filling.
  6. Roll up the sushi until rice is covering the worms.  Slice that row with a sharp knife and cut into sushi pieces.  Continue making rolls
  7. Wrap each sushi in a piece of green fruit roll up to resemble seaweed
  8. For the sashimi, cut the thick rice crispies into rectangles and place a Swedish fish on top.  Wrap the sashimi in a seaweed belt to hold it in place.
This recipe was so fun to make with my little helpers, Zane and Blane.  Really it is a kid friendly recipe and so fun to snack on while making or if one falls on the ground, table, etc.  Any excuse to eat another gummy worm :)

I can't promise that sushi making will keep the kids attention for that long.. This also went on while making sushi... wild boys!
 



The sushi bites were the perfect compliment to our Asian Night at the Broughtons!  Ricky made some wonderful Kung Pau chicken, noodles,egg drop soup and lettuce wraps.  They set the bar high for our dinner parties!  No pressure for us now!
