I've really been slacking on the blog posting lately. Life has been super busy, and I haven't been able to even catch up on the sleep I've been missing from hanging out with friends til late at night! Like last night when we went to get sno cones at 9:30 and then decided to go swimming til 11 pm. Craziness!!
I have been cooking some, but just haven't had the time to post about it. Last night I made some heavenly Stuffed Bell Peppers. I didn't take a picture, but trust me they are good!
Stuffed Bell Peppers
Recipe from my friend Steph
- 5 bell peppers
- 1 roll of the packaged Italian sausage
- 1 onion (or dehydrated onion)
- Garlic powder (just enough to put in the meat)
- Parmesan cheese
- Mozzarella shredded cheese
- Brown rice a serving for 4
Preheat oven 375*
- Chop 1 onion and 1 pepper sauté in pan
- Cook sausage and rice as directed
- Barely cut the bottom of the bell peppers so they stand evenly. Cut off tops and clean out seeds
- Once sausage is cooked mix onion, garlic powder and bell peppers together with the meat. Add about 1/4 c of parmesan cheese. Let it cook together for about 5 mins. Add rice.
- Stuff bell peppers and cook for 30 mins. Add mozzarella cheese and broil for 5 mins to melt and brown the cheese.
If u have extra stuffing I put it in a separate pan and cook it for about 15 mins. Eat it plain or on tortilla chips with some salsa as an "appetizer"
My Bear dog has also been sick this week from an obstruction in his stomach. Not fun to have a sick throwing up puppy. He is generally very happy so it was hard to see him acting so sad. We took him to the Illinois River with us for the Fourth of July and he perked up for a bit, but ultimately still felt bad.
We took him in to the vet on Friday to see if he needed surgery. Our wonderful vet tried a couple different options to get him to pass the obstruction. Over the weekend he has been acting almost completely normal which is wonderful. After an X-ray this morning, we saw that Bear has been able to pass the obstruction to his colon! Thanks to everyone who has been praying for him! The vet does not think we will have to have surgery with as well as he is doing :)
